The optimal scenarios (in terms of nutritional and organoleptic values) resulting from WP2 will be subjected to sustainability evaluation in WP3, using some of the knowledge generated in WP1 and applying a multi-criteria optimization procedure.

The most promising innovative solutions will be validated based on product nutritional value and will be subjected to an impact pathway study. This is a good way to assess the potential positive and negative consequences in case of launch.

The two-three most sustainable scenarios will be tested on pilots in close collaboration with local processors. Then, some consumption and commercialization tests will be performed before they will be finally put in the market.
